Last minute chicken soup

Just to be clear- When I say last minute, I mean last minute before running out the door for work. Before heading to work I almost always try to throw something in the crockpot or in a marinade for grilling. This may make me sound like an overachiever, but in reality it’s just because I can’t be bothered to cook if I wait until 4pm to start thinking about dinner.

This recipe would not be a very good last minute meal right before dinner… considering everything in it is frozen. However, since this recipe just calls for primarily chicken and frozen veggies, it is very cost effective. I always have my freezer stocked with different frozen vegetable blends- its a huge money and time saver! More about that in one of my very 1st blog posts, here. This soup is also great if you’re like me and trying to eat light for the upcoming swimsuit/shorts season.

  • 1 6oz box low sodium chicken broth
  • 1 lb chicken breast
  • 1 big bag frozen assorted stew veggies (carrots, onion, celery, potato)
  • 3/4 c frozen sweet corn
  • 1 heaping tsp onion powder
  • 1 heaping tsp garlic powder
  • A few shakes of Italian seasoning (very official measurement)
  • Black pepper to taste

This couldn’t be easier- toss everything in the crockpot and cook on low for 6 hours. Break up chicken with a large wooden spoon and serve! This would be great with egg noodles or rice, or as is for a low calorie/carb dinner.

    I need a new crockpot, as my current one is about 20 years old and I simply don’t trust it to work safely and consistently while I’m away all day, but I’m saving this simple and easy recipe once I finally break down and get a new one. Thanks!

  2. I love soups in the crockpot- but even more than that i love that you’ve reminded me about using frozen veggies!! cutting up veggies for soup is so time consuming (but also therapeutic, so i can’t really complain if i have time to do it!).
