simple chopped salad

makes 3 lunch portion salads


1 head romaine lettuce, washed and finely chopped

1 roma tomato, diced

1 can chickpeas, rinsed and drained

1/4 c. onion, finely diced

1 large green bell pepper, diced

a sprinkle of sunflower seeds

1-2 tbsp. vinaigrette dressing (I like greek)

optional: sprinkle of feta cheese

This is my go-to lunch salad. It’s refreshing and light, but the chickpeas add a protein punch to keep me full through the afternoon. I always eat an apple afterwards for my sweet fix, plus it’s high in stay-full fiber.
