This is an adaptation of an oven-baked recipe floating around all over pinterest. Its also one of my go-to recipes when I want something hearty yet healthy!
1 lb chicken breast
1 bag frozen broccoli
1 bag frozen mixed vegetables
1 packet Italian dressing seasoning mix
1-2 c. water
Place chicken breast in crockpot and top with remaining ingredients. Cook on slow for 6 hours. Before serving, chicken should easily shred as you stir it around. I like to serve this over rice because the extra juices from the crockpot season the rice nicely.
