1 can black beans, rinsed and drained
1-2 bell peppers, diced
1 medium onion, diced
1 lb lean ground beef (or chicken)
1/3 c. taco seasoning
Brown meat and drain grease. Add peppers and onions, simmer until soft. Add in taco seasoning and about 2/3 c. water. Cook until moisture is absorbed. This recipes makes a lot of filling for a taco dish, but you can feel better knowing it is bulked up with vegetables and beans!
