This recipe takes 5 minutes to throw in the crockpot and smells AMAZING when I get in the door from work. I love you, crockpot.
- 2-3 bell peppers, sliced
- 1 lb chicken breast (this will shred easily before serving)
- 1-2 tbsp mexican seasoning
- 1 tbsp olive oil
- ¼ c. water
Toss all ingredients together and put in slow cooker on low for 6 hours or on high for 4 hours until chicken is cooked through.
Before serving, use a large wooden spoon to break up the chicken breasts. They will shred instantly to the touch! Serve with your favorite tortillas.
