AKA lazy stuffed peppers because it tastes exactly the same- but requires half the labor!
- 3 bell peppers, diced (bonus pointed for assorted colors!)
- 1 large onion, diced
- 1 tbsp. minced garlic
- 1 lb lean ground beef or sausage
- 2 tbsp. tomato paste
- 1 tsp italian seasoning
- 1 cup tomato sauce
- 2 c. brown rice or quinoa, cooked
In a large skillet, cook ground meat until browned. Add in peppers, garlic and onions and cook until soft. Reduce to simmer and add in tomato paste, sauce, and italian seasoning. Serve mixture on a bed of rice.
